Chickpea and avocado salad sandwich

There are only so many PB&J sandwiches one kid can eat for lunch before a change is needed. Switch things up with this delightfully green salad, the ideal foundation for your child’s favourite sandwich toppings.

Ingredients

  • 1 15 oz can chickpeas, drained and rinsed
  • 1 avocado, pitted, peeled and roughly chopped
  • ¼ cup cilantro, chopped
  • 2 tbsp green onion, finely chopped
  • Juice of 1 lime
  • Salt and pepper, to taste
  • Whole grain sandwich bread
  • Favourite sandwich toppings

Instructions

  1. In a medium bowl, smash the chickpeas and avocado together using a potato masher.
  2. Mix in cilantro, green onion, and lime juice. Season to taste with salt and pepper.
  3. Spread onto sandwich bread, layering with the other toppings.
  4. Makes enough for 3-4 sandwiches.

Tips

Our favourite toppings are spinach, sprouts, iceberg lettuce, cucumber, and tomatoes. Got some leftover salad? Use it as a dip.

    1. That’s a good question! We haven’t tried that, but it doesn’t hurt to see! (Especially since mashed avocado doesn’t seem to last very long!) If you do try it, let us know how it goes!
